2021 Prosecco Pet Nat

The 2021 Prosecco "Col Fondo" aka Pet Nat, is once again from the wonderful Box Grove Vineyard at Nagambie. You may be familiar with a "Pet Nat" style of wine which is the French term for this same type of sparkling method. In Italy it is known as "Col Fondo".

Col Fondo, or ‘with the bottoms’ is a traditional sparkling wine method from northern Italy, that uses bottle fermentation and retention of the yeast sediment to give bubbles and texture. Like Pet Nat, it will be naturally cloudy, and the better for it!

The 2021 Season was unusually cool compared to the last decade of warmth, and that delayed ripening and preserved much needed acidity, giving crispness and freshness to the wine. You can stand it up in the fridge and allow it to settle clear, or you can shake it (lightly) to get the full yeasty complexity.

With no added sulphites, this fun cloudy Fizz is made from the traditional Glera grape. So fresh and yum!
